This Slow Cooker Pineapple BBQ Meatballs recipe is by far one of my husband’s favorites. To be honest, it’s one of mine too, not just because it tastes great, but also because these slow cooker pineapple BBQ meatballs are super easy to make. They take a little time, yes, but it’s not like you have to sit and stir, mix or even watch them for that matter. Just put them in the slow cooker, set a timer, and go on about your day. I love it when we are planning a party because I can cook something super tasty and still have time to tidy up the house a bit and get ready.

Another reasonI love my slow cooker so much in the summer: it doesn’t heat up the house. OMG, using the oven or stovetop is torture during the summer. Even when we cook on the grill, I find myself using the oven or stove for something. So anytime I can use the slow cooker it’s a welcome treat! Which is how these meatballs ended up being a 4th of July tradition. Several years ago, I decided to take my mom’s BBQ meatballs, give them a little extra tang with pineapple juice, andserve as anappetizerat our 4th of July party because I wanted to avoid my stovetop and oven, lol.

FAQs

What is the secret to making tender meatballs? ›

Egg and breadcrumbs are common mix-ins to add moisture and tenderness. Another binder option that people swear by is a panade, which is fresh or dry breadcrumbs that have been soaked in milk. “The soaked breadcrumbs help keep the proteins in the meat from shrinking,” as food writer Tara Holland explained in the Kitchn.

What do you put in meatballs so they don't fall apart? ›

Add a lightly beaten egg, but not too much. Egg acts as a binder for the ingredients, but you only need a small amount. One small egg will do for one pound of minced meat. Alternatively, if you're following an egg-free diet, you could soak fresh bread in milk, squeezing out any excess milk, to use as a binder.

How long to heat meatballs in crockpot on high? ›

Cover the slow cooker and cook the meatballs on HIGH for 2 to 2 1/2 hours, until the meatballs are cooked through (slice one in half to check). With a spoon, gently turn the meatballs to coat them in the sauce and distribute the garlic and red pepper flakes. Sprinkle additional Parmesan and parsley on top, to taste.

What makes meatballs more tender? ›

Milk: Adds moisture and tenderizes the meat, making our meatballs juicy and tender once cooked. Egg: Adds more moisture and helps the mixture firm up once cooked. Parmesan: My secret ingredient for the best meatballs! Parmigiano-Reggiano adds flavor and salt to our mixture.

Do meatballs get more tender the longer they cook? ›

Tenderizing the Meat:

As the collagen in the meat dissolves over time, it transforms into gelatin, which not only adds a silky texture to the sauce but also contributes to the overall richness and depth of flavor. The longer the simmer, the more tender and succulent the meatballs become.

Why do my meatballs fall apart in the slow cooker? ›

One disadvantage to the slow cooker is that meatballs may fall apart if you put them in the pot raw. By partially cooking the meatballs before you put them in the slow cooker, you can ensure your meatballs do not fall apart.

Why do you put milk in meatballs? ›

When it comes to adding liquid to meatball mixtures, milk is often used for its versatility, depth of flavor, and richness. Without the use of milk, you may be faced with a plate of dry meatballs. Milk adds a certain level of moisture that helps produce perfectly tender meatballs.

What's a good sauce for meatballs in a crockpot? ›

To sauce the meatballs in a slow cooker:

Add frozen meatballs to crockpot. Add chili sauce and grape jelly. Cover and cook for 2 to 3 hours on HIGH or 4 to 6 hours on LOW, until the sauce is hot. Serve directly from the crockpot with a serving spoon or toothpicks, or transfer to a serving dish.

Can I leave meatballs in crockpot overnight? ›

Just brown them in the oven under broil and then set the crockpot on low and cook them overnight in the sauce. They'll be perfectly done, perfectly safe, and delicious in the morning. A few extra hours won't hurt them at all and then you won't have to worry about time, temperature and food safety.

What side goes with meatballs? ›

Crusty bread, marinara and mozzerella cheese. Buttered egg noodles (or spaetzle) or alternately buttered and parsleyed boiled potatoes, steamed green beans. Or go with mashed potatoes, green peas and lingonberry jam. Rice and tomato sauce, white asparagus.

What can I eat with meatballs instead of pasta? ›

Mashed potatoes are a classic pairing for meatballs, like these Grape Jelly Meatballs. Photo by Jennifer Stevens. For a change from the usual plain rice or noodles, give this rice pilaf a try on the side of some Lamb Meatballs and Sauce.

Is it better to grill or bake meatballs? ›

I find that baking them and then finishing them in the sauce is the best method. Baking them ensures even cooking and browning as well as good flavor development. Throwing them into the sauce for a few minutes before serving flavors the sauce and keeps the meatballs moist and delicious.

What vegetables go best with meatballs? ›

Green beans are one of my favorite sides to serve with meatballs! Some homemade meatballs with a side or roasted green beans is such a filling and delicious meal. You can even cook your meatballs and roast your green beans at the same time.

How do you keep meatballs from getting tough? ›

When meatballs are packed together too tightly, they cook up tough, rubbery, and chewy. → Follow this tip: Being gentle is the name of the game when it comes to forming meatballs. Consider oiling your hands so the mixture won't stick to them, and then gently and quickly form the meat into evenly sized balls.

Why are my meatballs not tender? ›

Don't Over-Mix the Meat

Over-mixing. The more you mix ground meat with seasonings, the tougher, springier, and more compact the finished product will be—we want loose and tender, not tight and sausage-like.

Is it better to use milk or water in meatballs? ›

Milk, definitely. Water doesn't add flavor or fat, so it detracts from the finished meatballs. If I don't have milk, or I'm making them for people who don't eat milk with meat (a significant portion of my family keeps kosher) I use beef or chicken stock. It adds moisture and flavor, which is what you want.

What does adding milk to meatballs do? ›

When it comes to adding liquid to meatball mixtures, milk is often used for its versatility, depth of flavor, and richness. Without the use of milk, you may be faced with a plate of dry meatballs. Milk adds a certain level of moisture that helps produce perfectly tender meatballs.
