  • 2 lbs tiny new potatoes
  • 1 tablespoon olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • pepper
  • 3 garlic cloves, minced

  • Wash and scrub potatoes.
  • Cut potatoes in half.
  • Grease a baking sheet.
  • Preheat the oven to 400°F.
  • Place potatoes in a bowl or zip lock bag.
  • Add the olive oil and coat potatoes thoroughly.
  • Sprinkle potatoes with garlic, rosemary, and salt and pepper and stir or shake to mix well.
  • Turn out onto baking sheet.
  • Bake uncovered for 20 to 35 minutes, until lightly browned and crispy, stirring occasionally.

  1. I loved this recipe, but I knew I would just from reading it as the potatoes I make are very similar. I upped the olive oil to 2 T just because I love olive oil. Ate these like potato chips. Delicious.

  4. Very yummy! I used fingerling potatoes from a farmers market, and dried rosemary. I knew it was was going to be great 10 minutes after I put it in the oven. The smell was fantastic and filled the whole house. Thank you for sharing this recipe with us.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p><p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
